The above compares a mere 1/4 tsp. of arrowroot with an entire Tbsp of cornstarch ... that explains the big difference. So both cornstarch and arrowroot are just awful for carbohydrates. What they would be good for, however, is bringing you back from a hypo, if you are on insulin or a sulfonylurea! A few of the flours at the lower end of the list weren't bad ... High-fat sesame flour - 26.6 grams Low-fat peanut flour - 31.3 grams Defatted peanut flour - 34.7 grams of carbs Full-fat soy flour - 35.2 grams Low-fat sesame flour - 35.5 grams Low-fat soy flour - 38.2 grams Defatted soy flour - 38.4 grams These are the kinds of products you could probably order on the internet. It would be worth it, to allow you to enjoy some of your favorite foods from the " old days, " while still selecting the lower-carb versions.
