I'm thinking that carrots are also a bit over-rated as being high carb. I got to wondering about the glycemic Index on these two foods. They're not listed -- at least in Rick Mendosa's on-line list. My " rice experiment " gave a 1-hour PP of 206; a 2-hour of 175. (I'd thought the second reading was much lower, but written stats don't lie.) When I first met with my dietitian she said that the optimum exercise plan for a t-2 is to take a brisk 15 minute walk after each meal..
