Gluten free question

It is easy to suggest a Gluten free diet but not everyone can afford to buy these specialty items. How about giving some ideas on how you can do a gluten free schedule on a tight budget. If you tell the lady with a 2 year old to go on that diet with her child then maybe you need to tell her how she can do it and what you all would suggest. Martha

dont buy any of the gf foods. it doesnt have to be expensive someone posted a link the otherday on how to go gf on food stamps even. cook from scratch start out with some thing simple like homemade baked chicken nuggets using almond flour coating. buy whole foods like fruits and veggies and beef and chicken. I sent a fantastic website that breaks down a weekly menu on food stamps. It’s very basic and anyone who can read and who has access to food stamps and a basic kitchen can pull it off.

A GFCF diet requires a little more thought and planning, but if you make your own flour mixes (buying rice flour, tapioca and potato starch) at the Asian grocery stores (and there are plenty of them around). . . . .they are cheaper than what whole foods or other health food stores have. What will be tough is replacing all the yogurt/cheese type products that people love to serve to little kids. We were on a really tight budget when we started the diet 10 years ago. . .but it can be done. She will just have to learn to make cookies, but everything else, fruits, veggies, basic meats. . . .they are all gluten/casein free to begin with. It’s just all the processed junk and sauces that people tend to eat that has to get thrown out—and that’s good to do anyway. It’s only expensive if the woman doesn’t really have time to cook. I prefer to use Vance’s Dairy Free as a replacement milk because many recipes use the powder as a milk sub. GFCF ideas for snacksBaby carrotsGrapesApplesCelery sticks with nut butter (if the child can tolerate the nuts) It’s hard to give specific suggestions, because usually the children who need the diet the most are really picky eaters, and need things really customized at the beginning in order to make a successful transition. However, the MOST important tip is to start slowly and to find one dependable, wholesome item that the child will eat during the transition to a gluten free diet—because what often happens is that the kids refuse most of the foods at first. My son at only GFCF pancakes and fruit for a year and half while making the transition. A lot of family members expressed extreme disapproval and made dire predictions about stunted growth etc. However, since he is now 6’ 1” at 13 years old, I think we proved them wrong. We worked with a nutritionist to ensure he was getting proper nutrients—so budgeting for supplements is a must.
