Guest guest
Hi Elva! Thanks for the belated wishes. Gee I was offline for a bit (lots of Christmas shopping) and I come back to over 500 emails! This time of year the delete will come in handy!! Your cheesecake sounds good too. My daughter is a full fledged vegetarian (vegan), so I can empathize with you. I will say when we went out for breakfast the other day it worked out great though. I had steak, eggs and some cream cheese, she had my toast (plain, no butter) and hash browns! Found some tiny candy canes that are 4 carbs each. Will indulge one of these days. Today, Dec. 8th, is my daughter's 17th birthday. I have made a diabetic lemon cheesecake, a recipe that I got on the Net somewhere, and have posted here before, except instead of two pkgs of cream cheese, you use 1 plg plus 1 cup of light cottage cheese, mix it all up in the food processor, add the jello that's dissolved in 2/3 c of boiling water, then stir in 2 cups of lite Cool Whip stuff. I have made it with strawberry and raspberry jello, topped with fresh fruit, but this time I am trying the lemon jello. It needs some fruit of some sort for the top, so I dont know what I will find in December in Ontario....!!!! I am also going to buy some sugar free ice cream. It's good we can buy or make these sorts of things to allow us to participate in celebrations and hopefully not feel too deprived. Now to figure out the main course - daughter is a half-assed vegetarian... Elva t2, d & e >>

Vicki The health front is showing some improvement! My most recent A1C was down to 10.1, I am averaging fasting readings of about 220 ( a BIG drop from 500+ ) Still not perfect, but getting better with control. I am now also using Advandia 8 mg BID. I am losing weight after finally stopping Elavil. I had been on it for about 10 years and until a few months ago I didn't know of it's propensity for weight gain, fluid retention, etc. Doc took me off it gradually, and my appetite is way down, weight is dropping. Ministry is going great, last week I was installed as our church's newest Senior Pastor. I am also working at the Free Clinic, doing crisis intervention, and next week I begin as a counselor at a domestic violence shelter. Keeping quite busy and quite happy.
