I make large batches and freeze....then pop in the toaster for a quick snack. I use this as " bread " ....you can make waffle sandwiches. Millet Zuchini Waffles Peel, steam 2 med zuchini (save hot filtered boiling water) Soak Millet seeds for 12-24 hours/rinse very well through metal screen. In a blender: 2 TBS coconut oil 1 tsp baking powder 1 TBS vanilla flavor 2 eggs (or 1/2 soaked flax seeds if not doing eggs) Add the soaked/rinsed millet (2 cups) Add steamed zuchini and water (if necessary as you see the mix blending) Pour on to a waffle iron. Top these with more raw coconut oil or ghee! The kids won't eat these if they are used to sugar, or processed waffles in the box. They'll want them topped with sugar of some sort. But once you get all the sugar out.....these are a treat they'll beg for. Anyone who has gone on Atkins for example, will tell you, they love anything that even resembles bread once it's been removed for several months.
