NScheer, MSRDLD > > Hi, That article in Utne was probably excerpted from " The WellBeing Journal " which has a website (wellbeingjournal.com). (Utne is a survey magazine, which reprints from other pubs as you know.) I have been gluten and soy intolerant for years and that well written, well researched article explains the connection between those two and hypothyroidism (among other things.) Everyone should read that article. Soy is not a wonderfood for everyone. As a matter of fact, it is one of the most polluted, over pesticided crops on the planet since so much of it is grown for animal feed. The soy industry (like all the other food industries dairy for instance) want you to believe that their product is perfect and healthy. For some, it is. For others it's not. If you can't get ahold of an Utne reader, you can probably find the source article from Wellbeing Journal. Also available in the Whole Depot. Cheers > > , > There is a really informative set of articles on soy in this month's Utne magazine (can be found at Whole Foods). It talks about the " dark side " of soy and does touch on soy lecithin and other types of soy. My husband (not the celiac.....I am) has noticed that he can't tolerate soy based products and this article explains that many or most people can't
