Guest guest Posted May 18, 1999 Report Share Posted May 18, 1999 Hi everyone, It is my birthday this coming Sunday and I am trying to figure out what sort of treat I can have since the regulation iced birthday cake with goo in the middle is off limits to me now. I wondered if anyone knows how to make a sugar free cheesecake with Splenda or some other sugar substitute. Or if you have any other recipe ideas for a suitable cake type thing, I'd like to have them. I do plan to get myself some sugar free ice cream, that will do if I cant come up with anything else. I have also suggested to hubby Dave that he go to the Secords candy shop and check out the sugar free chocolate section! This is my first birthday as a diabetic and I'd like to eat something decadentb but sugar free on the ocassion! How old am I? I havent decided yet, maybe 23 again, I recall that was a good year! Try http://www.altavista.com and type in exactly the following: +low +carb* +cheesecake The plus signs require the inclusion of each word, and the * is a wildcard to search for carb as well as carbohydrate. I am one who doesn't believe in substituting false cake for the real thing, so I had a respectable piece, and I've been chipping away at what's left (frozen). I just substitute the carbs pretty much, and am comfortable that one moment of decadence is not going to ruin my plan which I stick to otherwise. Hope it's a great one! Guest guest Posted May 19, 1999 Report Share Posted May 19, 1999 Elva, Here is a cheesecake recipe I have used for several years and I swear it tastes just like the real thing: Lovely Lemon Cheesecake 1 pkg. (4 serving size) sugar-free lemon Jello 2/3 C. boiling water 1 8 oz. pkg. low-fat or fat-free cream cheese 1 C. low-fat or fat-free cottage cheese 2 Cups whipped topping, thawed In a blender dissolve the Jello in the boiling water. Add the cheeses and blend until smooth. Pour mixture into a bowl and gently mix in the whipped topping. (I use a whisk to do this.) Scatter a few graham cracker crumbs in the bottom of a springform pan and pour the mixture over them. Chill until set. Unmold from pan and serve. If you can afford the carbs, this can be made using a graham cracker crumb pie crust instead of using a springform pan. I top the finished cheesecake with sliced fresh fruit or make a puree of fruit mixed with sweetener and pour over each serving. I have also made my own sugar-free " pie filling " by heating fruit in a little water until it comes to a boil then thickening it with cornstarch. I add sweetener when it has cooled and then spread the filling on top of the cheesecake. I also vary the Jello flavors and use strawberry filling topped with fresh strawberries, etc. One of my favorite variations is to make a raspberry-flavored filling and put it in a chocolate crumb crust and then top each serving with raspberry puree.
