" Unfortunately, I've always had a sweet tooth. Never a weight problem though. When I was on the job, it was nothing to buy a 1lb package of jelly beans and eat the whole bag in one shift. Same with cookies. Chip bags never lasted too long either. I have eliminated all of that. That's why it's good to have an occasional klondike, or some fat-free chips. Here is a recipe for folks with a sweet tooth I found at http://www.mymenus.com that, although somewhat high in carbs, is low in fat: Pralines and Cream Ice Milk Prep: 20 min, Cook: 5 min, plus freezing time. 3/4 cup chopped pecans, divided 1/2 cup sugar nonstick vegetable spray 2/3 cup sugar 2 cups 1% milk 1 cup evaporated skim milk 1/2 cup frozen egg substitute, thawed 1 tsp. vanilla extract To make Pralines, place half the pecans in container of electric blender or food processor; cover and process until finely chopped. Place 1/2 cup sugar in a small saucepan over medium high heat. Caramelize by stirring often until sugar melts and is golden - about 3 minutes. Stir in finely chopped pecans. Rapidly spread mixture onto a baking sheet coated with cooking spray. Cool completely. Break mixture into small pieces. If smaller pieces are desired, place in a food processor and process until finely ground. Add remaining 1/4 cup pecans that have been coarsely chopped to praline mixture. Set aside. To make ice milk, combine 2/3 cup sugar and next 4 ingredients in a bowl; beat at medium speed of an electric mixer until well blended. Pour mixture into the freezer can of a 2 quart ice cream maker, freeze according to manufacturer's instructions. Spoon into a freezer safe container, stir in praline mixture. Cover and freeze for at least 2 hours. This recipe serves 14 people. Per serving: calories 136, fat 4.3g, 28% calories from fat, cholesterol 2mg, protein 3.8g, carbohydrates 21.5g, fiber 0.4g, sodium 53mg. I find that I would prefer to have just a *bite* of the real thing than to have my system full of chemicals. Saw them at cat shows I've been to but never knew an owner.. I was mistaken.. the Klondikes do have aspartame..but I do feel better with the fat, sugar & carbs reduced.. I bought one of those countertop freezers (you put the container in the freezer overnight) but have never used it. I think I might be able to dream up a fat free, sugar free icecream using sugarfree pudding, etc. but don't know the precise measurements. Thank you for your help. Guest guest Posted April 7, 1999 Report Share Posted April 7, 1999 Kay, Since I am a low carber my recipe is probably way high in fats for you but I have posted two forms one for low carbers and one for low fatters. LO Carb Icecream 4 egg yolks (whisk until light) 2 cups Heavy Cream 2 cups half and half 1/4 - 1/2 cup splenda (or equivilant AS make it too taste) 1/4 tsp salt 1 tsp vanilla (I use vanilla bean as well) scalk cream in top of dbl boiler, cool. Add egg yolks slowly whisking them in. Slowly cook stirring constantly until mixture thickens. Add vanilla, salt, sugar supstitute. Cool thoroughly and put in freezer. To make this recipe Lo Fat Use 1 1/2 cups of 1/2 or 1 percent milk. The mixture will not thicken the same but all else is the same. You can add strawberries (I crush them first) or peaches or another fruit if you are not low carb, in the last 2 minutes of freezing.
