My parents gave it to me for Christmas a few years ago with a note inside " I know you're not diabetic but we have this book and think it's really great " . Geez, I hope it wasn't an omen of things to come LOL. I have told friends (non-diabetic) about it and it has become a staple in their kitchens as well. Try the quesadilla recipe if you like Mexican food-I add baked chicken breast to make it a great dinner. Are you all on the road right now. I wanted to go to Laredo with last night when he came through here, but couldn't get a load lined up and with my daughter 2 weeks away from the baby due date, I better stay around here for now. She would never forgive me if I left and she had that kid without Mommie here. BTW ate at Petro here in little rock.. . Salad, green beans, barbequed ribs and BG's went through the roof. I scraped most of the sauce off. Can't figure it out. Shouldn't have done that. No real carbs. ?????? With high-fat meats like ribs, You should eat no more than 2 ounces per sitting because those two ounces are at least ten grams of fat. I'm afraid that this equals no more than two ribs, even with the sauce scraped off. This is the part that really bites about being diabetic. I suppose we could all splurge on a rib dinner once every four months or so, as long as we realize the effect that it will have on BG levels. Type 1s can at least measure enough insulin to counter the BG rise. As a Type 2, I'd probably still see the effects until the next afternoon. I would be interested in just why this does.
