Hi!

Here is some interesting information from Dr. Mercola regarding healthy

cocoa nibs. I am going to order some!

Healthy, Tasty & All-Natural Cocoa Nibs:

Perfect for Snacking, Great in Recipes and Sugar & Dairy Free!

If you are like most people, chocolate is one of your favorite candy snacks.

Unfortunately, the chocolate found in most stores today is processed using

methods that destroy about one-quarter to one-half of chocolate's naturally

occurring flavonoids, which are the powerful compounds that scavenge the

free radicals in your body that can cause cancer.

Way Healthier Coco Nibs

Three 16 oz Packages -- $49.95

Plus, most commercial chocolate is loaded with high amounts of white sugar,

unhealthy oils, a host of harmful additives, and even lead!

But if you are a chocolate lover, there is hope: when properly processed,

chocolate and the source it is derived from, cocoa, can actually be very

good for you.

When I first began reading about the benefits of eating chocolate, I was

skeptical because the chocolate companies funded the research findings.

However, since then there have been many independent studies that strongly

confirm the benefits of consuming chocolate and cocoa in moderation. Below

is a list of some key benefits of cocoa:

*

Cocoa is a rich source of polyphenols (the same type of antioxidants found

in red wine).

*

The fat found in cocoa is stearic acid - which doesn't affect cholesterol

levels.

*

The flavonoids in cocoa not only attack free radicals, but are good for your

heart they reduce the stickiness of platelets, cells that play an

important role in blood clotting.

*

Just one ounce of cocoa contains large amounts of the same beneficial plant

chemicals found in a cup of brewed black tea.

*

In trials, doctors at Harvard found that flavonols in chocolate help the

body to produce nitric oxide, a compound essential for proper heart

function.

*

The University of California-Berkeley Wellness letter recently stated " One

large, ongoing study of the benefits of exercise found that men who eat

chocolate in moderation live longer than those who eat none. "

*

For some, eating chocolate has a pleasant influence on mood, leading to a

reduction in tension.

While the above findings are great news for you chocolate lovers, they do

not apply not to the chocolate bars you'll find at your local grocery store

due to their processing methods, high sugar and unhealthy oil content, and

artificial ingredients.

But they definitely apply to the all-natural food I have finally been able

to make available to you: Cacao Nibs.

Cacao Nibs are the closest thing you can get to the whole, complete cocoa

bean in its natural state. They are the meat of the roasted cacao bean with

the husk removed, and then broken into bits.

Finding high-quality cacao nibs can be quite a challenge. I searched

extensively, but was largely unsatisfied with the cacao nibs I was finding

online and in the few stores that carried them ? the processing methods were

incorrect, or in some cases the taste was just too bitter or stale. I have

finally discovered a rare but exceptional source, and now through a special

packaging agreement am able to make them available to you!

These Way Healthier Organic Coco Nibs:

*

It's important to note that some organic raw cocoa beans can be contaminated

with molds, bacteria and other potentially harmful organisms. However, most

of the contamination occurs in the husks, which are removed from Way

Healthier Organic Coco Nibs.

NOTE: These nibs are NOT like a chocolate bar. IF you are seeking a healthy

chocolate bar, I urge you to read about Dagoba Chocolate right now. Instead

the Way Healthier Organic Coco Nibs are all-natural and crunchy, like a nut

with cocoa taste. As you will read below, most people will want to use them

in a wide variety of recipes, such as in smoothies or on salads, while some

will also enjoy them as a snack.

Organic Cacao Beans: a Good Tasting Powerful Source of Antioxidants!

The cacao beans from which Way Healthier Organic Coco Nibs are produced are

high in antioxidants (phenolic bioflavanoids). According to preliminary

studies, these antioxidants are linked to:

*

Decreased blood pressure

*

Improved circulation

*

Lower death rate from heart disease

*

Improved function of endothelial cells that line the blood vessels

*

Greater protection from free radicals, which trigger cancer, heart disease

and stroke

*

Improved digestion

*

Aiding in treatment for anemia, kidney stones and poor appetite

According to research cited in The New York Times, raw cacao beans are

super-rich in antioxidant flavonols. Cacao beans contain 10,000 milligrams

(10 grams) per 100 grams of flavonol antioxidants a whopping 10%

antioxidant concentration level! Raw and minimally processed cocoa, like Way

Healthier Organic Coco Nibs, contain an abundance of flavonoids called

catechins. Catechins have been attributed to helping prevent disease, and

boosting your immune system.

Research has demonstrated that the antioxidants in cacao are highly stable

and easily available to human metabolism. Food scientists found that cocoa

powder has nearly twice the antioxidants of red wine and up to three times

what is found in green tea.

Their findings were published in the American Chemical Society's Journal of

Agriculture and Food Chemistry. Scientists have known that cocoa contains

significant antioxidants, but no one knew just how rich they were compared

with those in red wine and green tea.

The ORAC test examines the antioxidant levels of various foods. The higher

the ORAC score, the higher the level of antioxidants present in the food.

According to the US Department of Agriculture / Journal of the American

Chemical Society, dark chocolate reigns at the top of the ORAC list with the

most antioxidants by far. Below is a comparison breakdown of ORAC levels of

various antioxidant rich foods (per 100 grams):

The ORAC Score* of Various Foods

DARK CHOCOLATE 13,120

Milk chocolate 6,740

Prunes 5,770

Raisins 2,830

Blueberries 2,400

Blackberries 2,036

Minimally processed organic chocolate like Way Healthier Organic Coco Nibs

are loaded with essential minerals including copper. Liver is rich in

copper too. Which would you rather eat? Order Now!

Cacao beans contain over 300 chemically identifiable compounds making it one

of the most complex food substances on Earth! Organic and minimally

processed cocoa is also loaded with many essential minerals including:

*

Copper (.8mg per 100g), which enhances red blood cells' ability to carry

oxygen. The average woman is deficient in copper.

*

PEA (Phenylethylamine), responsible for lifting depressions, is one of a

group of plant-based stimulants called methylxanthines, who's best know

member is caffeine. Chocolate has straight caffeine, but in very small

amounts (70mg/100g).

*

A high level of magnesium (131mg per 100 g), which is credited for adding to

the euphoria you get from eating chocolate. Magnesium levels are found to be

low during menstruation.

*

Serotonin (3mg/100g) and tyramine (2mg/100g), that both contribute to a mild

calming, balancing effect.

How Cacao Beans Becomes Way Healthier Organic Coco Nibs

Chocolate originates from the bean (or seed) of a tree that grows in

tropical areas of the world. This tree is called a cacao tree and is

predominately found in countries within 10-20 degrees latitude of the

equator.

These trees need warm, humid weather and loose, rich soil. They like shaded

sunlight. Since cacao trees prefer shade, banana trees, rubber trees or

coconut palms are planted beside the cacao tree in the orchards.

The cacao tree forms large seed pods. Inside the pods are the beans (or

seeds) that eventually become the basis for chocolate (pictured right). It

takes 5-6 months for the cacao pods to develop. The trees are generally

harvested twice a year, but can be harvested throughout the year.

These pods are cut off from the tree with a machete and the beans separated

from the pod. These beans are then laid out on a flat surface, covered with

banana leaves and allowed to ferment. As the seeds ferment they go from a

light off-white color to a purplish color to a dark brown color and they

also become wrinkled.

The cacao beans used to make Way Healthier Organic Coco are kept at a low

temperature during the fermentation process. The temperature of the air

under the banana leaves (heat is generated during the fermentation process)

does not exceed 45° C (113° F). During the 2-3 day fermentation process

these beans take on a richer chocolate taste and loose some of their

bitterness.

Because of the high humidity under the leaves throughout the fermentation

process, the cacao beans, once fermented, must be dried. When dried

traditionally by the sun, the process takes 2-3 days. The cacao beans are

then chopped into nibs. The outer peeling, along with the seed shell, is

removed from the inner seed. The result is a delicious cocoa snack that does

not contain any dairy, sugar, or additives.

The Way Healthier Advantage Starts with Preferred Organic Cacao Beans

There are three general categories of cacao varieties: the Forasteros, the

Criollos and the Trinitarios. The Forasteros and Criollos are the original

types while the Trinitarios were created when the two crossed accidentally

in Trinidad.

Forastero cacao beans have a plain and basic chocolate flavor. Forastero, a

more plentiful type and accounts for most of the world's chocolate, and is

known as " bulk " cocoa. This variety is easier to cultivate, has a

thick-walled pod, and a pungent aroma. It's a rather bitter, harsh type of

cocoa.

Criollo has light, soft and thin-skinned pods, Criollos have a very unique,

pleasant mild aroma and account for only 10% of the world crop. It is

particularly susceptible to climatic influences and is difficult to rear.

Its yield tends to be smaller than that of other varieties and it takes

longer to ripen.

Trinitario beans possess a terrific aromatic flavor. These trees are

particularly suitable for cultivation in equatorial climates all over the

world. Trinitarios developed to be heartier than the Criollos but also

retain the Criollos special flavor qualities.

The cacao beans used to make Way Healthier Organic Coco Nibs come from

Ecuador and are of the Trinitario variety possessing a richer, dark brown

color and more dense texture than the cacao that originates from the

Philippines. Their flavor is also more intense, and there is almost a faint

coffee like flavor to them in addition to the exquisite light chocolate

taste.
