Guest guest
Yikes, Tami! Do you disagree with the reports about agave nectar typically being a large part corn syrup? Here's the first link I found when I googled agave nectar high fructose corn syrup-- I haven't read it so I can't say how good it is, I just wanted to post something. didn't Mercola cover this some months ago?: http://www.newmediaexplorer.org/chris/2008/11/17/agave_nectar_the_high_fructose_\ health_food_fraud.htm Stevia is a decent sweetener in general, but does a truly medicore job of sweetening chocolate--the best it can do is cut the bitterness, it won't actually make it sweet. Xylitol is better, although since it is not fully digestible, it can create other problems. What about a nuttier tasting mix that could be sweetened with stevia? I bought one bottle of agave nectar and never bought it again-- my feeling about it was that it was too much like the packaged honey that Kentucky Fried Chicken used to serve when I was a kid for it to be a healthy, whole food. > > We've been worried about hypoglycemia in and even though his test came out normal, we didn't do the gold standard test with the 3 blood draws, sweet orange drink, etc. I thought it would be too much for him. So I am going based on symptoms and treating him " as if " he has this, without true proof. The fact is that he craves carbs constantly and then crashes and gets cranky. The ND suggested 7 tbs of coconut oil per day. The DO said there is a recipe that makes it much easier to get down and this would then just substitute his normal carb snacks and really helps to balance him out. So I made it this morning. He likes it, it's not too bad. (does it taste like real fudge? NO) I think our kids will tolerate it well. It is very expensive to make a batch so be sure to freeze it and make it last...keep the hubby out of it too! > > 1 19 oz jar of organic virgin coconut oil > 1 jar of organic almond butter (or your nut butter of choice) > 1 heaping tlbs of organic raw cocoa powder (no sugar just the raw powder) > 1 oz of organic raw cocoa nibs > 4 tlbs of organic agave syrup ( or other low glycemic sweetener to taste but not too much) > 3 tlbs of flax seeds > > You can also add other nuts, but I would keep it all sugar free and NOT add dried fruits. > > Just mix it up with a hand mixer and spread it in a large pan and put in the refrigerator or freezer until the texture is harder, like fudge. Then cut out a square as snacks before/after and in between meals. > > Happy New Year! > > Tami >
