I really like the enchiladas though. A couple new things that I tried last week was the Artichoke Chicken Salad and the Tuna Pasta Salad. Tuna Pasta Salad was really good and I'm not that crazy about tuna. I think the Artichoke Chicken would be better mixed with lettuce. I substituted zuchinni for cucumbers as well.
