The enchiladas were 'da bomb!!! Well...they looked like a bomb

Yes, the corn tortillas often fall apart either while making them or

after. It may depend on the freshness. I really like the enchiladas

though.

A couple new things that I tried last week was the Artichoke Chicken

Salad and the Tuna Pasta Salad. Tuna Pasta Salad was really good and

I'm not that crazy about tuna. I think the Artichoke Chicken would

be better mixed with lettuce. I substituted zuchinni for cucumbers

as well.

If you heat the corn tortillas up in the microwave before you use

them, they dont fall apart nearly as bad. Or, when dipping them in

the enchilada sauce, make sure they are good and warm before filling

them.
