Where did you get the 3-4 days information? I have not seen that. Also, do you realize that 6 days is after 3-4 days? After 3-4 days could mean anything because 5, 6, 7, 8, 9, etc. are after 3-4 days. I think a better question and answer is are they more nutritious at 1 inch or 2 inches or 3 inches, etc.? I don't know who is doing this research, but I keep asking. People will notice that I do focus on specifics to a point that drives certain kinds of persons crazy. I think that they are saying that at three days is when the optimum nutrition begins. I wouldn't sprout past 6. I use the round green trays and when all the sprouts reach the top (about 5 days), I just remove the covers, put them in indirect light and they green up. Sometimes I like to see how tall they will get so I do them for one or two days more. I can't cover them with the green covers because that would squish them, so I just take a microwave cover and when I go to bed, I cover them (so they don't dry out overnight). Kind of like a humidity dome. Works just fine. I have 15 pages of internet articles about broccoli sprouts, especially articles about it and cancer. The following link shows a picture of Dr. Talalay with broccoli sprouts - He says 3 day old broccoli sprouts are best for cancer 'treatment'. If you count soak time, the picture looks like 5 or 6 day old sprouts to me. The 1 Tablespoon of broccoli seeds I put to soak tonight I will eat Saturday. Hope this helps. I had read a research paper that stated the cancer inhibiting compounds are released through heating broccolli sprouts at 140-158 degrees for 10 min. and then crushing them. I just had a cocktail of 1 lb. fresh tomatoes in blender with 3.5 oz. of heated broccoli sprouts 6 min. at 140-150 degrees, 1 tsp broccoli powder and a handful of fresh arugala, salt & pepper. Wow!! great taste.
