Is it expensive? >> it is sooooo cheap and bought fresh This is exactly what I did yesterday I rinsed it in cold water, peeled it, cut it into small cubes then cooked it in the microwave till tender (no water, no oil) then added sauteed onions, green peppers, & garlic then a can of stewed tomatoes which happened to be Mexican flavor but you can add regular canned tomatoes or stewed tomatoes anf flavor it with oregano and pepper, etc (to your tastes) heat it all up & serve hot as a side or over pasta or rice even sprinkle with alittle grated parmesan if you like Barb whose husband was converted to liking eggplant too Quote Link to comment Share on other sites More sharing options...
