I now use potatoes and rice also as I am happy to have these in his diet. To bake SCD (put simply) you need to remove GFCF four and use almond flour instead. You need to remove potatoes and rice and use butternut squash! I use oil in cooking (organic sunflower) and I sweeten with honey (no sugar allowed!) We use bicarb soda instead of baking soda too! Most things are easy to make following normal recipe and using these substitutes! You can by SCD specific burgers and sausages (and lovely bacon) etc from Devon Rose who deliver! I have just found out my son (9) has H-pylori even though he was scoped 4 years ago and it didnt show up then, but he did have the relevant inflammation apparently it is hard to always get a positive result. I would suggest you look at the site www.pecanbread.com and there's also a very active yahoo group for them. They're US based but there are lots of people from elsewhere on the group. The site is basically dedicated to children with autism doing SCD and there is a wealth of information on there about how to do the diet / recipes / suppliers etc. Feel free to email me about anything else to do with the diet that you want to know - not as experienced as the other poster but very happy to try and help! My very energetic nearly four year old has been scd a few months and we do experience the things you are concerned about. We have good and bad days and sometimes break the rules (like when he starts eating play doh because he's craving carbs!). I make him squash " chips " cut into thin chip shape smothered in olive oil plus salt and rosemary and baked. Helps if you have electric fan oven. Pumpkin also works in season. Also anything with nuts. He goes on and off (gets bored I think) but almonds ( or pecans and hazelnuts work well), egg, honey, bicarb of soda. Dry mix for biscuits. Wetter for muffins and you can add blueberries or dates or banana. Or savoury version for bread. I've used cashews on this. If eggs are ok I make Omelette and add veg pulp from the juicer, sometimes almond flour or psyllium husk. Also found a good butcher who makes pure meat sausages Or adds leek or tomatoes. There's an American group called pecan bread and a web site of the same name with children's scd recipes. Like Sophie we found that scd alone did not clear bacteria but helped sustain after antibiotics.
