Guest guest Posted August 5, 2004 Report Share Posted August 5, 2004 Dear Kishore (and all interested), We used to have Rajasthani neighbors (I must have been 13 or so) who used to make Laal Maas. Their daughter, who was my age, used to joke* (or was it the truth?) that 1 kg Lamb shoulder needs to be cooked with 1 kg red chili powder (freshly powdered)... There is a special type of red chili that is not too pungent, but has a lovely flavor and color... and that chili, yes you guessed it - comes from Rajasthan. You have rightly said, very little flavoring, they use only ginger garlic paste, a wee bit of onions and lots of ghee to cook it up. The only thing I can remember after my first and last try at our neighbor's is the sweet pain I had to bear in the morning :-D I had read somewhere that in the climatically hotter areas people tend to eat more spice. Probably as a preservative (food preservative?), I don't know. Sherpas eat a lot of hot chilis too, they say, to keep their nose running and eyes clear (not to mention to beat the cold)!
