Fresh water has a PH balance of 7.0 and this is considered balanced. Anything that gives a reading when tested that is lower than 7.0 is considered acidic and higher alkaline. Now the potentially confusing part is that when you measure the effect of foods on the body acidic foods do not always make your body more acidic or alkaline foods more alkaline. Therefore foods are described as acid forming or alkaline forming. This means that although a lemon is acidic it makes your blood and saliva more alkaline. At the same time it would still make your stomach more acidic as it something in the body that converts the acidic lemon into having a more alkaline influence. No I am going to need more than one paragraph! It is very difficult to measure our blood in terms of acid and alkaline and impossible to measure the PH balance of our cells so to get a rough indication you can measure your saliva and urine. The theory is that if you eat a lot of acid forming foods your blood will become more acidic and to maintain balance your body gets rid of this excess acid through urination. Therefore is you eat a lot of white bread you would expect to see your urine show a more acidic reading. After a while of eating predominantly acid forming foods it is thought your body fluids become more acidic and as a result your saliva will read as acidic. Generally vegetables are more alkaline forming and most other foods are acid forming so to ensure your overall diet is alkaline forming just make sure half your daily food is made up of vegetables. This is a simple guide and for more details there is a section in my book Modern Day Macrobiotics with lists detailing which foods are more acidic or alkaline forming. Why bother? Current thinking is that an over acidic condition increases the risk of joint pains and swellings, on a cellular level may increase the risk of cancer, is implicated in headaches and migraines and overworks the kidneys. My brother in law is a dr, you probably missed most of my rants on him but he's clueless. He couldn't handle my natural pregnancy even worked on some major scare tactic to try and flip me into getting an ultrasound using typical dr talk " oh Reggie your afp tests came out very bad I spoke to dr... who said you MUST come in and get a stage 2 ultrasound and amnio right away. I told her there is no way you'll have the amnio so she said ok (thanks like it's up to her??) but you MUST come have the ultrasound " I went to my midwife who did the test herself and found my bil's office did the test (which isn't a test really but a screening) so so so wrong that he had Marlie at a 1:35 chance of having down's syndrome and the correct results showed 1:3600 or so. My bil insisted on seeing the papers and you should have seen him slapping the paper back and forth going " Uh huh " and trying to find something wrong. I have been testing all my clients saliva since the beginning of the year and most have saliva that is acidic. This also applies to many people following a mb diet so from Leno’s point of view the chewing could actually make the situation worse. Best thing is to get some test strips, keep testing your saliva and then play around with your diet until your saliva becomes more alkaline and see how you feel. Love, Simon Hi Simon and Reg Just thought I would throw this out. I actually got this from Leno at the SC. As we know grains are acid and you can make balance for this by eating lots of vegs. The other way is through chewing. The saliva in the mouth is alkaline and so through chewing you actually change the rice from acid to a more balanced food containing both. Interesting eh?? Guest guest Posted August 30, 2006 Report Share Posted August 30, 2006 that is a really interesting perspective - I like that the Taoists say that swallowing saliva strenghtens the spleen and whole body. they have excercises that generate saliva that one then swallows to nourish the organs and chi but waht simon was saying makes sense too - perhaps people are so lacking in minerals and their general body chemistry is so acidic that they cannot even produce alkaline saliva - supposedly one of the most alkaline body fluids. Guest guest Posted August 30, 2006 Report Share Posted August 30, 2006 that is a really interesting perspective - I like that the Taoists say that swallowing saliva strenghtens the spleen and whole body. they have excercises that generate saliva that one then swallows to nourish the organs and chi but waht simon was saying makes sense too - perhaps people are so lacking in minerals and their general body chemistry is so acidic that they cannot even produce alkaline saliva - supposedly one of the most alkaline body fluids. That could be a red flag for body imbalance. apparently the very very alkaline pancreatic fluids are one so the most important components of general body ph balance and if that does not occur systemic acidity often results. and that the acidice stomach ph is necessary to trugger the release of these alkaline pancreatic fluids (bicarbonates) wrote: Maybe it is the saliva that is produced through chewing that is alkaline and the saliva that sits in the mouth becomes acid. just a thought. You are saying about the pancreatic fluids being alkaline and Simon is saying folks are more acidic these days. From an energetic stand point, the third chakra relates to the pancreas/spleen/stomach area which creates the energy that is driving in nature (if we are not careful). Today everyone works so hard especially on the east coast of the states and often that hard working energy is forced from the third chakra similar to the idea of putting the shoulder to the wheel and grinding away. Stress makes the blood acidic and also hard work puts pressure on the third chakra and creates bound up energy. Wonderful how one thing always reflects another. The idea is that if someone constantly eats an acid forming diet then over a period of time the body fluids slowly become more acidic which would suggest the saliva would be acidic whether we are chewing or not. Yes of course there are many benefits to chewing the chemical breaking down of foods in the mouth could change the PH balance but at the moment it is all speculation. To me if people eating a macrobiotic diet suffer from issues likely to be caused by over acidity then we can generalise that that person’s overall diet was too acid forming and at least we have good ideas on how to correct it. Guest guest Posted August 30, 2006 Report Share Posted August 30, 2006 Hi Simon I do get your point about someone who is eating an highly acid forming diet however there is a lot of power in saliva and it has been used over the years as a source of healing such as in the Tibetan exercise that Ilanit mentioned. The Chinese also have a similar traditional technique that helps you to maintain healthy teeth by rubbing saliva a number of times around the gums. I still think there is validity in chewing to stimulate saliva in order to break down foods and create a more balanced acid/alkaline ratio. I think both sides are related and work together if that makes sense. Changing the diet and also paying attention to chewing. I am having a bit of a grin to myself here coz I don't win awards for my chewing abilities. Don't we often push the very thing we need to do for ourselves!!! I also highly recommend eating lots of fresh vegetables. I have observed many many people eating macrobiotics and there is a tendency to choose grains/grain products and well cooked vegetable dishes over the lightly blanched, steamed, pressed or even raw dishes. Not only do these help you to feel more relaxed, they also give you a bright, fresh and youthful appearance. I think it is especially important for women with children and for those people who live in cities or areas that have a lot of buildings in proportion to trees and green. A simple rule of thumb that helps one to get back to balance is to eat the same amount of vegs as grains so if you take a second helping of the grain dish you have to match it with the same amount of vegs. Sounds like you could overeat and that is possible for a while but soon it feels like too much and that second helping of grain is not as appealing when you know you also have to eat the vegs!!
