Happy 2007 to everyone as well!

I'm all for soaking grain and even just an hour of pre-soaking is

enough to begin the germination process that breaks down the phytates

that inhibit absorbtion. Pytates are no big deal if you soak most of

the time but even if you don't soak all the time it is just great.

Remember there is no " Right " ! Be creative and playful and get some

good food into you. Everything changes. Sometimes I like to dry

roast the grain before cooking instead of soaking. Sometimes I like

to make a rissotto and just don't have the grain soaked. Much of the

time I soak overnight and then cook up one thing for breakfast and one

for lunch and dinner. Find systems that work for you. The success

journal on my site has some handy tools to keep you organized and

moving forward.
