Guest guest Posted October 12, 2006 Report Share Posted October 12, 2006 My second batch of using maple syrup, this time 3/4 % maple syrup and 1/4 % sugar did unexpected things: where it normally takes 8 to 10 days to get a mature kombucha drink, I had to take the liquid out of my 2 jars after 5 days. It was extremely carbonated, and already more sour than I wanted it to be. A may have left too many scobies in ( 1/1/2 to 2 in thick); the scobies are just thriving in the maple syrup, one had a lot of foamy bubbly stuff that actually climbed up and out of the pot.
