Plus there's also Pho, or other Asian soups. it is us American's who seem to think it has to be something like pancakes or cercal for breakfast. Many countries soup is the thing to start the day with. Also we eat porridge - 1 cup of rice to 4+ cups of water in a crockpot on low overnight. Then we add raisins, nuts, dried fruit, etc. I absolutely love eating veggies for breakfast. Guest guest Posted April 1, 2010 Report Share Posted April 1, 2010 I just made up a batch of burritos, which could be modified to be free of all things offending... they contained chorizo (from the coop in Stillwater) fried potatoes with onions, peppers and spiceshome made salsa, and jalepenos perhaps you could use rice instead of the stuff below: and the stuff you don't want... egg sour cream cheese (raw cheddar) I also do a variety with ground beef and refried beans, and similar other ingredients. I make a whole batch and freeze them for later for grab-and-go breakfasts at work. They nuke up fast, (yes, I hate to nuke them, but I don't have other options here). Other good food for breakfast I've eaten would be stir fry... leftover steak and potatoes... soaked oatmeal with my 'super mix' (bee pollen, cinnamon, maple sugar, chia seeds) and berries or fruit... I love the soup idea. Pho has rice noodles, not sure if you can find those in a whole brown rice variety but they do sell brown rice noodles (Tinkyada is the best) and you could put those in if you want carbs. Mung bean noodles aren't bad either, but refined. I made up about 30 yesterday as they keep very well and make a great snack or nut butter sandwich. OATMEAL PANCAKES 2 cups uncooked, thick cut rolled oats 1 ½ cups quinoa, oat, or buckwheat flour 2 ½ cups unsweetened almond milk 1 tsp sea salt 1 tsp baking soda dissolved in hot wate 1 tsp aluminum free baking powder 1 TBS brown rice syrup, stevia, xylitol or black strap molasses 1 ripe banana 2 TBS ghee melted Soak oats and flour in almond milk overnight. In the morning add the remaining ingredients, mix well, cook in ghee or coconut oil as griddle cakes. NOTES Add fresh fruits, crispy nuts and spices to taste. Chopped apple cinnamon and nutmeg work well. Blueberries and coconut is a treat. An extra banana and some chopped nuts. Top with apple sauce, brown rice syrup, fresh fruit, nut butter (no peanut on detox).
