Hey All,

The turkey eggs are piling up! Last year you guys wanted more turkey

eggs than I had so I kept over more hens instead of turning them into

Thanksgiving dinners. Well, they are laying really great! I'm getting

lots and lots of eggs - now more than you are buying! What's a farmer to

do?

Turkey eggs make fantastic omelets. They are really, really great

tasting when cooked up fresh. I don't know about raw, some one who eats

eggs that way will have to enlighten me. How about a comparison between

the turkey and goose eggs in a smoothie? There are also lots and lots

of goose eggs at the Warehouse. Waterfowl eggs will keep in the frig a

lot longer than dry land bird eggs. Maybe it's that super tough shell

and inner membrane.

They are all seasonal folks! Enjoy them while they are in season, miss

them when they aren't available and look forward to when you can enjoy

them again.

Interest was expressed so I plan on pickling some goose and duck eggs.

I figure I can squeeze one goose and one duck egg in a pint jar. Won't

those make eyes pop at your next picnic? Now the only problem is,

finding time to do it. I'm working 2 outside part-time jobs trying to

keep this place afloat and is working down in Monticello so he

isn't available to help me with the farm. It has gotten pretty hectic.

Now for the weird turkey behavior. My tom turkey is a royal palm, now

gong on 2 years old. Last year it took him a bit to understand what he

was supposed to do with the hens (and which end to do it to) but this

year, he is all Mr. Machismo. During the daytime. If there are any

eggs in the communal nest towards evening or overnight, HE fluffs

himself up, clucks and sits on them! I go out there and the hens look at

me as it to say, " What the h---? " and I am looking at them and at him

saying the same thing. I have to physically pick him up and put him off

the nest. Then he shakes himself off and goes back to being Mr.

Machismo. I asked my friend, Ellen, if she had ever heard of this kind

of behavior or if my turkey was having a transgender moment and she just

about laughed herself into an asthma attack. Weird.

Have a great day, Pat
