Baby sunk after tasting.....

I tasted a batch of Earl Grey yesterday (it had a nice think baby at

day 8) and today I noticed that is sunk to the middle of the jar. I

assume this is ok, and a new baby will probably be produced now. Could

it be the Earl Grey that made this happen? I have never used it before

this batch and no other one have ever done this.

Dear Connie, I shouldn't think you would leave it THAT long any more or

you will end up with a sour brew!

No, good ol Earl Grey is guiltless in the matter. It's your wobbling of the

jar that's done it. In order to taste the brew you must have disturbed

the brew in some way - it doesn't matter. As the bacteria and yeasts are

distributed not just in the scoby but all over the brew, your batch will

go on fermenting until you consider it the right taste for you, and then

it's harvesting time. :-)

The position of scobys in the jar does not matter in any way. Actually,

scobys are just the cellular by-product of fermentation. You can brew

your KT with the liquid only ... and still end up with a new scoby on top.

However, a scoby on top makes a good screen against mold spores, sort of

seals the brew against outside influence. That's why it is also good to

pour any acidic starter liquid gently over the very top of the sweet tea/

mother scoby.

Your brew seems fine!
