For a 1-gal batch the 1 cup of starter should be enough but you can still spoon a couple of Tablespoons of vinegar over the top for added assurance here on your first batch. Use the organic distilled that you have. If you wanted to use the Bragg's, you'd need to " kill " it by bringing it just to a boil and cooling before use. But, it is best to avoid overnight cooling. Aren't you using RO water or other filtered/bottled water? You should not boil all the water, only enough to steep the tea and dissolve the sugar, then strain it and add it to the bulk of the water in the vessel, add the SCOBY, then add the starter. It's really excessive to boil filtered or distilled/RO water and since it actually removes oxygen from the water (making it less alive) it should be avoided (not to mention the unneeded fuel and time), plus as I said overnight cooling is a time when mold can take hold, and should be avoided. --V ~~~ There is no way to peace; peace is the way ~~~~ --A.J. I bought both an Organic Black Orange Pekoe Tea and some organic Dragon Well Green Tea but for the first few batches, until I get the hang of it, I'm only using straight Black Orange Pekoe Tea, then I'll mix some green tea in it, and hopefully after I get some babies, try an entire green tea mix from the Dragon Well Green Tea. I would like to try a Pur-eh tea (sp?) later on since Anahata Balance sells a 'weight loss' KT that's based on a Pur-eh KT. :-) Maybe it would help me to shed a few pounds! Great going! You know, KT will help you lose weight whether you have Pu-er or not. If you drink a small glass 20-30 mins before meals it will really help you regulate your appetite, and then whenever you feel hungry if you have a little glass it really does the trick. I am hoping that my home brewed KT will be more helpful to me in losing weight...I think that over the years, I have REALLY messed up my metabolism. My younger sister has lost 11lbs by drinking GT's KT but I have lost nothing. It DOES help me curb my appetite, I actually have to be careful because I'll drink it as I'm cooking so I don't nibble on foods but then by the time the meal is done, I'm not hungry so I'll set it aside to eat later...by the time I am hungry, I've missed breakfast and lunch both so I'm sure my body has been holding onto the calories for energy since I'm not feeding it adequately. Maybe I should drink less at a time?? I am excited though!! I don't know if there is any truth to it at all...but it's a GREAT idea and certainly worth a try!!
