Guest guest Posted December 11, 2006 Report Share Posted December 11, 2006 i have attemted to brew three times now and i am having no joy what am i doing wrong the scoby is growing on the top but im not getting any fizz,the tea is always sweet,and always cloudy.i have also had mould,please help.i have boght the books read the recepie and done ecxactly what it says,i have also read about the amount of sugar to use and it say's it is not by weight, if it is in grams surley this is weight. i use 320grams for 4ltrs of brew. Hi , Sorry to hear about your beginner's troubles. Take heart! With a bit of trouble shooting and patience, I'm sure you'll get a winning hand. Fizz is not important in the brew itself. My brews do not get fizz until they are bottled and left for a while. Fizz adds nothing to the healthiness of your Kombucha Tea Tonic! The cloudiness sounds like the brew having too much yeast possibly. There is some disturbance in the balance of your brew. You know that the Kombucha culture is a 'helping arrangement' between its yeast and bacteria side? When did you have the mold? I hope you threw away the whole brew that was affected. If not, you could have a thoroughly unhealthy, even poisonous concoction which is better left well alone. I see you live in the UK as I do. I'd be very happy to send you a new culture with a really good acidic starter to go with it. I send them out regularly just for the cost of p & p. All my 'clients' have gone on to become successful brewers. :-)) You would also have coaching included after receiving your culture, freely provided by your Kombucha agony aunt ;-) It would be a pleasure to help you. Guest guest Posted December 11, 2006 Report Share Posted December 11, 2006 Hi and EveryOne, As I have written to you off list the photos you sent in do not look like mold, rather they look like the new Kombucha Colony forming. Unless they are fuzzy they are not mold....see the photos of moldy Kombucha in the list PHOTOS section in the Photos of Kombucha album. http://health.ph.groups.yahoo.com/group/original_kombucha/photos While it may take time for the fizz to develop in successive batches, after two weeks, at most, your Kombucha should start to have some acidity not taste just like sweet tea. My suggestion would be to wait and see if mold, or a Kombucha Colony, develop on your ferment. If you have already thrown it away then you will need to get a new Kombucha Colony and some finished Kombucha tea to start your new batch. What was the source of your original stater tea and Kombucha Colony? Perhaps there is a problem with the source or perhaps you are not waiting long enough for results. If you post where you live maybe someone near you will be able to share a new start with you. My guess is that it is a new Kombucha Colony forming but it is really hard to know for sure from a photo....it would be interesting to know what has happened since the photo was taken, if the fermentation was allowed to continue.....
