" Steeping " and " fermenting " are probably better to describe the two respective stages of the process, both for beer and for KT (though it's a little more involved than just " steeping " when you're talking about beer), and " brewing " can refer to the process in its entirety. Yes, Jim, agreed. I pretty much stick to " steeping " and " fermenting " when I write, though I'm sure I'm not completely consistent.
