When the scoby separates from the glass

When a scoby separates from the glass before the tea is ready, does

it " stop " fermenting? One of my sisters separated one from the glass

when testing to see if the tea was ready (it wasn't) and the thin

scoby went to the bottom. I'm guessing that if she leaves it alone,

the process will start all over and a new scoby will form at the top?

Or should she harvest this batch even if it's too sweet and start

again?
