I meant to buy it last week then thought I'd wait to see how any of you liked it first since there are many others here that are experienced at brewing KT... Thanks! Guest guest Posted January 16, 2007 Report Share Posted January 16, 2007 I treated myself to a beautiful ceramic kombucha jar for continuous brewing from 'Harmonic Health' - in the UK. They have three sizes - mine is 9 litres I think - quite expensive but perfect in my eyes - a lovely little wooden tap to collect from!. My first brew in it is just about ready after two weeks. My family want to know why I've still got lots of other little brews on the go - this 'biggy' was meant to clear the decks a bit - but I am so hooked on this lovely stuff that I have to have a few different types on the go - Earl Grey for example - and I want to keep the main brew a simple one with black and green teas. People on this site have been very supportive when I have asked for advice about my 17 year old son Harry who has multiple allergies and digestive problems etc. He wouldn't try KT until a couple of weeks before Christmas when he felt so ill he gave it a go. I started him on a tiny dose as advised (1tsp in water after meals) - and within just a few doses I could see him change - his face changed, his mood improved - and this improvement lasted all over Christmas and the New Year. Better than he has felt for years. Unfortunately he has since been very ill with a virus which has set him back a lot - we treated it with echinacea and goldenseal, and carried in with the KT, but he is back to being very reactive to foods, nauseous, depressed again. Hopefully things will settle back down - but I really do believe that it was those very small amounts of KT which turned things around before Christmas. So thank you again for all your encouragement. Guest guest Posted January 16, 2007 Report Share Posted January 16, 2007 I've been using the continuous bewing system that I got from the HH for a little over 2 years now and it works great for me. I bottle when the tea tastes to my satisfaction and if I find I have more tea than I need I let it sit for a little while, add the fermented tea to my extra SCOBY pot and restart. Using the 2 1/2 gallon, heating pad and thermostat provides a continuous supply of high quality kombucha for my wife and I. We both drink a couple of glasses a day. Unless you live in a climate or have a room with a constant temperature high enough for kombucha, get the whole kit at one time rather than piecing it together like I did. I need to say that a constant temperature is not at all required to brew kombucha, nor a super warm room. Claiming this to be so sells heaters and other products, but it's not true. I guarantee that for most of the 2000+ years humans have been brewing kombucha, there were no electric heating pads, and very few rooms in Mongolia have constant temps of 72 degrees F in the winter. Constant high temps is a myth, a myth that sells products. You don't have to buy products to have high-quality kombucha.
