Will, there's no need to add sugar, the ginger gives the brew plenty of material to build fizz from. Adding sugar at secondary brew is a dubious practice and could easily lead to explosions. Right? No. The reason to secondary ferment at cold temps is to avoid explosions. No one is trying to preserve the fruit... in fact, the deterioration of the fruit is the very thing that yields the fizz and flavor... people are not in general adding sugar with the fruit, not at all. I think this idea that KT bioremediates pesticides is questionable, certainly it is not proven. If by bioremediation you mean, metabolizes them into something nontoxic, which is a different concept from detoxification. KT is definitely a detoxifier-- it removes toxins and helps them flush from the body-- and because KT detoxes the body, some people claim it detoxes any pesticides in the brew. This also is unproven, though certainly an attractive idea. But here's the thing-- if the KT has to detox the materials you give it to ferment with, it seems to me that there would be less detoxing happening within the body, because there is a saturation point. Not only that, you'd be drinking the residues of that detoxing, putting your liver and kidneys to work, on top of one's own toxins being detoxed. I think it's much better to avoid the pesticides to start with.
