I have never felt the need for a second fermentation, my first is quite

bubbly and fizzy, so why mess up a good thing?

Cheryl, 2nd fermentation is completely optional. If you are happy with

your brews, don't worry be happy. Many longtime brewers do not do 2nd ferment.
