Wolfberries are a great Chinese herb and are delicious.

You can ferment them right in with the fermenting KT. No

need to remove them. However as in all cases of adding herbs

to a ferment the possibility of changing one's KT to

something else exists. So I recommend always keeping one

" pure " KT going while experimenting. Wolfberries may also

be added after the ferment, before bottling, or made into a

juice and added with KT.

Hello,

I just wanted to share a recipe that just blew my mind. My

sister

bought me this big bag of dried wolfberries/lycii from the

health food

store in her chinatown. I didn't know what to do with them

because

they didn't taste that great but I knew they're supposed to

have

AMAZING anti-cancer properties.

So I decided to throw a handful into my second brewing of

Kombucha,

and three days later I opened it and it fizzed like selzer!

and the

berries are plump and taste awesome. What a great

combination, they

worked so well together, no slime on the fruit just YUM.

I plan on adding some wolf berries (goji berries) to my secondary

ferment next time. I'm curious though, how large was your brew? you

said you used a handful; is that maybe about half a cup? I brew 1

gallon secondary ferments. I don't want my bottle to blow up though!

Hi,

I added about 20-30 dried gojiberries to my 1/2 gallon second ferment

and about 50-60 to my 1gallon bottles. I basically filled the bottle

almost to the top and then added berries to fill the quarter sized

neck of the bottle. I guess because they are dried that made it fizz

better, I just don't know because they don't seem to have a lot of

sugar, but they really made a LOT of fizz. (perhaps my batch got

yeast heavy?)....

I add them to all my brews now and even though they don't change the

flavor that much it really feels good to have a medium in which to

eat them regularly. I do have a starter batch just in case something

gets contaminated.

I add 15 goji berries to an 18oz botttle. I cut them in half and do

2 day secondary fermation.
