Hi Kathy,

My basic recipe is based on a litre/quart quantity and runs as follows:

1 lire/quart of water,

100 grams sugar (which is about 1/2 cup minus a tablespoon ;-)

1 dessertspoon of open-leaved tea or 1-2 teabags of whatever tea you

fancy of proper tea camellia sinensis. Some people use less tea, but I like

it quite strong and so do my scobys ;-)

Happy brewing!

If I cannot do great things, I can do small things in a great way.
