Hi

I have made plenty of goat cheese, if that's what youre trying to make. The

best way I found was to do two things:

1. Not worry too much about the exact temperature, cheese is fairly forgiving,

unless youre trying to make consistent commercial cheese for customers.

2. Try heating up water on the stove, then pour it into a mason jar or other

container. Put the hot water and the cheese into a small cooler. I put a paper

bag on the bottom so the hot water doesnt melt anything. Then close the lid.

If you want, pack in some towels too, they will help keep it warmer longer.

Then let it sit overnight, or for 8 hours. This method has worked every time

for me. I usually just boil the water, let it cool a couple minutes and then

put it in the cooler with the cheese. It starts out fairly hot, but hasnt get

been too hot to kill the culture. This is ideal for making yogurt as well..

saves money vs buying a yogurt maker.

By the way, I also use this method for making soups or stews if I want to save

electricity. I boil my soup or stew on the stove, then stick it in a cooler

with plenty of towels to protect the plastics sides and bottom, shut the lid,

and let it cook. It's called the " haybox " method of cooking.

Good Luck
