Most believe that metal staples are not good for the tea. I agree with this. You can buy the Emporor's White Tea at the World Market if you live near one. There are no staples in the bags. Metal removed and tea still inside bag material ready for use. If one normally uses teabags placed in boiling water to make their tea, as commonly done in restaurants and fine hotels that is fine. The kombucha does not care. Since teabags are generally removed prior to fermenting there is no problem. The prohibition is on fermenting metals. I do not boil my water. I heat only to the temperature required to extract the full richest flavor of the tea. Boiling water may damage the tea's flavor and nutrients and cause a bitter KT. Boiling also reduces the oxygen available to the KT ferment. Lack of oxygen may foster a different species of yeasts and cause the kombucha to go off. I remove the tea and then add the sugar. This eliminates the possibility of the sugar clogging the t-bags and of any possible sugar-metal reaction as well. I have well water so I would have to filter mine if I did not boil it. I am thinking of filtering it again anyway until I can take a sample to have tested for carcinogens. What type of tea? I normally use green tea as the organic is readily available here. We just got a BJ's store not far from where I live and my husband and I are going today for my birthday so I am going to stock up if they have things and I can use in my brews. However, some people brew their tea, sugar, water, mixture with tea bags with metal staples ---before--- it comes into contact with the acidic Kombucha, and that seem to work just fine. Same with using a stainless steel pot to brew your water, sugar, tea mixture, that is fine too, - but once the Kombucha will be added in the form of a Kombucha Colony or Kombucha tea, then all metal should have been removed first. Luckily so far my kt hasn't cared and has just gone on making tea for me. But now I even have to question whether I really have THE kt. Sorry if I sound like a ditz.... I have a lot going on and my mind it not what it used to be lol. Thanks for the info. I will stick with filtering. By the way, the only filter I have is the one in my frig that filters the water that I get from the door. Is that good enough? The tea bag is used to make the sweet tea and does not come in contact with the Kombucha Tea. What would be the difference in brewing the sweet tea in a stainless container or using tea bag with stainless staples? The sweet tea should be moved to a glass or suitable container for fermentation. You would need to get the model number and find out from the maker what the specifications are on the filter. What it is rated to filter out. Actual clean water, filtered at the tap if need be, is far superior, imo, than water that has been trucked all over in plastic bottles. Anyway, I can say that I feel so much better since I've been drinking it. I told this to my doctor at my last visit and he said, " That's because it has caffeine " . I laughed at him and said now doc, if you remember, this is me, the one who hates the effects of caffeine (it gives me yucky jitters even if I don't have that much). So I don't believe I get enough caffeine from it to make a difference and besides, it is not that KIND of feeling.
