I agree with Margret that the best taste comes from a mixture of teas. For a long time I maintained one vessel/SCOBY line with just white/green teas, and that was tasty too. I let it ferment 12 days vice my usual 9 because of the cooler weather here. It came out a little tarter than I like but my wife loves it. I had been using white in bag form by Ceylon Teas. The Silver Needle is in leaf form by Adagio Teas . I find the white tea has a very delicate flavor and there is a different between the two teas. I have a couple of other leaf white teas I will try after the first of the year. I am not a purest. I use both organic and non-organics in by brewing and processed sugar. I would say let your live style dictate your preference. I think I can go out on the line and say that the first Kombucha (242 BC)was made with organic green tea and did not use refined sugar. However, just as clarification, the date 242 BC is only the first *written* reference to kombucha.
