Re: White Tea for KT

I use White Peony tea in the mixture I use, and I love it! I agree with

Margret that the best taste comes from a mixture of teas. For a long time

I maintained one vessel/SCOBY line with just white/green teas, and that was

tasty too. But now I'm back to all of them being a mix of 2 parts green, 1

part white, 1 part black.

Hello Skye, I make my KT from time to time with only White tea and it

is wonderful and tastes great! After a few batches, I always add some

black or green tea to give it a little boost. Some people here brew

with only White Tea but I think that a small amount of Caffeine is good

for the brew. It seems to thrive on it. Hope this helps, Myrna

using bags from Ceylon Teas but just got a sample of white bulk teas

and have a batch of Silver Needle white fermenting now. Should be

ready the first of the week.

of my favorite mixture I call BOG equal parts black, oolong, and

green teas. Give it a try.

White tea has caffeine. Very little, but still.

That is an excellent mixture Bill. I have made many brews with it.

Also you might try Oolong, White and a good quality of Black Tea. I

use Emperor's White Tea that I can only find at the Worls Market.

me understand what you are saying. I have always used it in a mix either

with green or with green and black-- I also prefer the flavor with a mix.

Let me know how that goes please.

I have a world market near by & will be going

to get some white teas. I was told that they

should always be organic... What is your

opinion on this?

Evening Skye

I bottled the Silver Needle this morning. I let it ferment 12 days

vice my usual 9 because of the cooler weather here. It came out a

little tarter than I like but my wife loves it. I had been using

white in bag form by Ceylon Teas. The Silver Needle is in leaf form

by Adagio Teas . I find the white tea has a very delicate flavor and

there is a different between the two teas. I have a couple of other

leaf white teas I will try after the first of the year.

I am not a purest. I use both organic and non-organics in by brewing

and processed sugar. I would say let your live style dictate your

preference. I think I can go out on the line and say that the first

Kombucha (242 BC)was made with organic green tea and did not use refined sugar.

Yes indeed! However, just as clarification, the date 242 BC is only the

first *written* reference to kombucha. Because in those days not very much

got written down unless it was essential business, and recipes for making

food did not come under that category, historians know that the reference

means KT was being brewed for hundreds if not thousands of years prior to

that date.
