SO are you wearing shorts and flip flops? I was telling my girls that

they don't sing " I am dreaming of a white Christmas " in Australia. I

don't think they can fathom that it is summer time at Christmas in

other parts of the world!

SO what did you think of Dallas? Are you having a Texas wedding or

down under?

There was so much junk, That I didn't bother. It's a good thing because my 14

yo is buzzing on a sugar high. Do you know how obnoxious a 14yo boy on a sugar

high is? I'm gonna kill him is no problem because she is on lortabs,

nothing bothers her......LOL.

here it is, I also make a walnut pie. I like it better that way, But Tom

likes the pecans.

Pecan Cobbler

3 c flour

1 c butter

1/2-3/4 c cream

3 c pecans

1 t cinnamon

1 c sugar

1/2 cwater

1 T baking powder

1 t salt

Bring the water to a boil. Add the sugar, and cook to the soft-ball

stage. Remove from the heat, and beat in 1/2 c butter, then 1 c

flour, and the cinnamon. Mix in the pecans, and spread in the

bottom of a greased baking dish.

Preheat the oven to 400 degrees. Cut the remaining flour into the

remaining butter until it is very granular. Add the baking powder

and salt, and mix in by tossing. Using a fork, mix in the cream,

a little at a time until the mixture is just shy of pourable. Do

not overmix. Drop spoonsful onto the pecans.

Immediately place in oven, after 15 min, reduce heat to 350 degrees

and bake for another 30 minutes, or until filling bubbles up.

Hi Mel!

I've never made a pecan cobbler but I made a pecan pie this afternoon

for Christmas dinner. It came out pretty good but the pecans got a

tad overcooked. :( Of course, I couldn't eat the crust but that's

okay, the filling is the best part anyway! A Pecan cobbler sounds

awesome!

If you like nuts, I've got an interesting pecan recipe for you. I

got it out of a recent " Low Carb " magazine. It's good and easy. I

usually either double or triple the recipe - it doesn't take any

more time.

Crunchy Cinnamon Pecans

1 large egg white

½ cup Splenda granular

2 cups pecans

1 tablespoon cinnamon*

1)Preheat oven to 350°.

2)Lightly spray baking sheet with nonstick

cooking spray.

3)Beat egg white and Spenda together in a

double-boiler over hot water bath.

4)Remove from heat.

5)Toss pecans in egg white mixture and add

cinnamon.

6)Spread coated pecans onto prepared sheet pan.

7)Bake at 350° for 16 minutes, mixing nuts after

baking halfway.

8)Cool and serve.

* Can substitute 1 tablespoon Cajun spice

for cinnamon.

Good protein, no carbs!

That sounds heavenly!

I can't wait to try it!

I LOVE glazed and spiced nuts!

I have been on a steady diet of fudge with nuts, brownies with nuts.

and anything else I can find with nuts for a week - and somehow I

have lost 2 pounds! I swore I was going to try today to eat more meat

and eggs, but I already blew it with breakfast of fudge with nuts and

coffee with hazelnut creamer!

WAIT! There protein in them there nuts! COOL! I wonder if that will

counteract the calories in the fudge? LOL, wouldn't that be

wonderful? AHH heck, I am just gonna enjoy it while it is the season

for all these goodies! So far I have lost 2 pounds and my size 8's

are fitting fine, so I am not going to stress it!
