If you are not experiencing detox symptoms at your current dose, it stands to reason that you can safely increase it a bit. Mike, if you feel well or even buzzingly well on it and enjoy your drink ... it's not too much. My husband and I drink AT LEAST 1 litre each per day which is about a quarter of a gallon/ 4 US cups. I have been reading your emails, since joining the the group a few days ago, and find the approach to brewing and drinking the noble brew far different from here. For instance in the information I started with from Sulis Health UK the advice is to start small, and no more than three small wine glasses per day.!! I notice also that the problems of mould appear far more often than I hear of here, perhaps to do with climate..? I also use a heating pad to keep a constant thermostatically controlled temperature. Certainly I have had no problems on that score, & my brews finish around 5 or 6 days. I have nothing but praise for the benefits it has given me and I am a very new boy at this, just about 4 1/2 months. Hope this is of interest & look forward to hearing from you,. With best wishes. Yes, that is generally sensible advice for people who have never had any KT before. For some people even less than that is advisable, while yet others drink far more and their body system doesn't mind. My husband and I have been drinking the Wonderful Stuff for a very long time. We go through patches when we drink very little, and others when we imbibe large quantities. It is always important to 'listen' to your body. In America there are quite a few different climate zones, some of which very closely co-incide with the British one. I believe that the seeming frequency of mould/mold occurring in the American subject's Kombucha is simply because there are so much more Americans on the list than British, and also that people very often write in when they have problems, e.g. mold. It's just one of those problems that can crop up for various reasons: mouldy environment, lacking hygiene, not enough acidity at the beginning of the brewing process..... > I also use a heating pad to keep a constant thermostatically controlled > temperature. It will speed up fermentation by perhaps 2 days. My other batches take an average of 8 days now, 10 in midwinter. Cooler temperatures are better for aiding the bacteria side in the brew, and producing a finer tasting beverage. With a heating pad you have to be extra careful to weed out your surplus of yeast by discarding the yeast sludge on the bottom of your fermentation container at bottling time and to take the starter for your next brew from the top of your brew, which is richest in bacteria. The reason I am asking this is because I know that people say that you should drink lots of water. I am also drinking about the same amount and I forget to drink water and am wondering if there is any side effects if one doesn't drink water. Could some one answer this question for me. There is an article only the one illness reported;http://www.cdc.gov/mmwr/preview/mmwrhtml/00039742.htm Toxins concentrate in your body when you normaly don't drink enough liquid, and if your trying to detox with kombucha, there will be symtoms...I would assume water helps to flush this out, reflemishing electrolytes and minerals in your body is a good thing, to stay hydrated.
