Guest guest Posted October 30, 2006 Report Share Posted October 30, 2006 If you want to use mostly sugar, but partially other sweeteners like honey, maple syrup, or grape juice, do you add the other sweeteners at the same time as the sugar (before the water boils), or do you add the other sweeteners after the sugared tea cools down? If you add them later, do you add them right away during the initial week of fermentation, or when you put the fermented KT in the refrigerator? --------------------------------- We have the perfect Group for you. Guest guest Posted November 1, 2006 Report Share Posted November 1, 2006 I boil a kettle full of water, then add it to a large 8 cup glass measuring bowl that has 3/4 cup of organic sugar and 3/4 cup maple syrup in it. I stir it all up until the sugar is dissolved, then add 6 tea bags let it steep, covered, until it is cool. Then I pour that into my gallon sun tea jar, add water to bring up the liquid level, then plop the SCOBY in and pour at least a cup of starter KT from the last batch over the top of the SCOBY, rubber band a folded paper towel over the top and bless the whole batch as I set it on a shelf in my pantry. That's just what I do and it's working great.
