Hi Pam,

My advice would be to refrigerate them right away. Since your KT is

stored in glass bottles there is always the possibility of an

explosion. They will continue to slowly ferment in the fridge but so

slowly that all that happens is that the taste gets smoother and the

bubbles more refined. KT can be kept refrigerated in glass bottles for

years and it only gets better:-))

My advice would be to refrigerate them right away. Since your KT is

stored in glass bottles there is always the possibility of an

explosion. They will continue to slowly ferment in the fridge but so

Hi Bev

If I'm not mistaken grolsch bottles are one with the wire top to hold

the stopper in place. I was under the impression that these would

release pressure if to much built up.

Hi Bill and EveryOne,

Not sure about Grolsch bottles but I have used Italian wine bottles

with the same kind of wire bail top and take it from me they do

explode....it has happened a few times.

Because, quite a force can build up inside of a glass bottle and when

it breaks it can send glass shards flying I recommend refrigerating

finished KT. I have stored KT in the refrigerator for up to three

years and when it is finally used it is the best KT in the world...

I use them too. I usually try to vent them every 2-3 days to keep the

gas from building up too much. I also store them in a cardboard box

packed with styrafoam peanuts to keep them from killing anyone if

they were to explode. So far, no explosions.

The wire stopper (the beugel or the bügel depending where you're from)

actually works the same way a canning jar works. The wire just lets

you recap the bottle if you don't finish the beer inside all at once.

It's what makes them bottle reusable too. The last thing you want

from it is for it to leak gas. Hope that clarifies things for you.

The Grolsch bottles are constructed to withstand high pressures as they are

made for beer, not wine or other beverage, which is of course highly

fizzy. I use the G bottles, and we have a tiny refrigerator so don't have

room to refrigerate more than a handful of bottles at a time. So I time my

supply so that my bottles are sitting on the shelf for no more than 5 or 6

days max, and put a couple bottles at a time in the fridge.

I have not had any explode, but I do not let them sit longer than that. KT

doesn't turn to vinegar in the bottle, rather it mellows. However, it

definitely continues to ferment which is why the bubbles develop. I am

leery of storing bottles at room temp for longer than a week.

That is, putting it into sealed bottles for a period of time. The taste

mellows and bubbles often develop more strongly. This is the point at

which many people add flavorings such as a couple of raisins, some grated

ginger, some dried coconut, other dried or fresh fruit or fruit juice,

medicinal herbs or other flavoring herbs.

I don't usually add things, just let the KT mellow and get bubbly. If you

want it to get bubbly, you usually need to bottle it when it's still a

little on the young (sweet) side so there is some sugar left for the

culture to work on, or, add material (such as from the list above) for the

culture to work on. All these variations change the finished product in

more and less subtle ways. The bottling phase is truly an art and each

person will have their own preferences.
