Then people started coming and "taking" our milk and leaving donations. Mostly about $4 per gallon. We are now up to three cows and still have trouble keeping enough milk in our house for our 1 gallon per day usage. As of Feb 1, we will switch to a cowshare program and request expense reimbursement of $8 per gallon, which includes delivery. This will barely cover the time, investment, energy, etc to produce this milk the way we are doing it now. We get $2 per dozen for our organic certified, flax fed eggs. Occasionally you can find them for $1.50/dozen, but it's not on a "regular" basis. Ours never advertises. We found our farmer through word of mouth, by asking on a free on-line local classified site. But before the person who answered our want ad would tell us who and where they got their milk, they had to make sure we were not 'Big Brother'...luckily we had a mutual friend! Here in Ashland, OR (first store outside of Calif to sell it retail and it must be marked " For Dog and Cat Use Only in Oregon " ) it is actually located on the very bottom shelf, so it's not the magnet here (yet!) However the OP butter is at eye level (well my eye level anyway). The OP cheese is mingled in with all the other name brand and local cheeses. The milk sold the first week I bought it for right around $7 and then the next time I bought it, it was down about 50 cents less. I currently buy my Guernsey milk directly from the farm for $5 a gallon, but the farmer said they may be going up to $6 soon. They don't sell cream or butter, but they do sell pastured eggs for $2 a dozen. She made some awesome cream cheese - I'll have to get the recipe from her. We get 4 gallons a week for our family of two adults and one teen and drive a little over an hour each way to get the milk. Some people here drive two hours each way to our farmer in order to get it. We also buy pastured chicken eggs at the same farm for $3.50/doz. Butter, yogurt and kefir I make from the cream, but I have seen butter for sale at the farm for $11 a pound. We bough some raw milk cheese there last week for $5.50 a pound (excellent!). Usually we buy raw milk cheese produced by a larger commercial dairy at the natural foods store for about the same price. I need to start making that though, as soon as I figure out exactly how to get started. I have made some 'farmer's cheese' that was pretty interesting, but no substitute for cheddar.
