Sooner or later they will " spawn " and that means they will break up into a million pieces. This is the time it is important to have the correct size strainer because you don't want to lose your future with a strainer whose holes are too large. These look a lot different from milk kefir grains and make a beverage that resembles soda pop. You can use extra milk kefir grains to convert to a water medium if you want to practice making water kefir. I can send you my recipe if you like. When you want the genuine article (real water kefir grains), I have those, too. But your milk kefir grains will serve you just fine. Once you use some milk kefir grains in a water medium they can never go back into milk. Also they will not grow. I value the book for its details on how kefir grains got into the hands of the common people and how drinking kefir is useful for people with serious diseases. I already knew most of the other stuff, but then again, I've been into kefir for 30+ years.
