Guest guest Posted December 12, 2004 Report Share Posted December 12, 2004 Hi KC, I think kefir does put back some good stuff into pasturized milk - at least I hope so, as I have to depend on the store-bought milk to make my kefir. My finished kefir seems to be healthy, does all that it is supposed to do and tastes wonderful :-) Another time, perhaps you could add some grains, or even some finished kefir to the milk that you wish to store (1/2 cup of kefir to 1 gallon of milk would do the trick). That will save it from going off and you won't have to pasteurize it :-) Cheers, and the K9's "Support bacteria - they're the only culture some people have."- The other day I had to pasteurize 1/2 gallon of milk and was curious if I add the keifer grains to it, will they put back some of the good flora/bacteria? Guest guest Posted December 12, 2004 Report Share Posted December 12, 2004 The only reason I had to pasteurize was because I wasn't totally prepared for the 3 gallons Margie gave me the first day after I didn't milk the night before. My two stainless steel buckets hold about 2.5 gallons, so I had to use the grain bucket, which I wipe out, but didn't feel it was clean. So, I just pasteurized that 1/2 gallon. No big thing, but I always want to make sure I don't add any really bad stuff to the milk. Thanks, K.C. Hi K.C., Kefir grains work just fine in pasteurized milk. They feed on lactose in order to work their magic and lactose is not destroyed by pasteurization. It is, of course, better to put them in raw milk, but if p/h milk is all you have, that's fine and it is still better than drinking the p/h stuff plain.
