Guest guest Posted June 19, 2011 Report Share Posted June 19, 2011 Melody, Here is one of my favorite muffin recipes: Summer Glory Muffins Preheat oven to 400° F. Prepare muffin tins with liners – or grease or oil. (I make small muffins, so I prepare a 12 muffin pan and a 6 muffin pan for a total of 18 muffins.) Ingredients 1/2 c. unbleached flour 1/2 c. whole-grain flours mixture 1 c. regular rolled oats 1/3 c. brown sugar 2 tsp. baking powder 1 tsp. baking soda 1 tsp. ground cinnamon 1 c. buttermilk 1/3 c. light molasses 3 Tbs. vegetable oil 1 egg or 2 egg whites 1 c. fresh or frozen blueberries (chopped if large) 1 c. grated carrot (2 med.) 1/2 c. raisins 1/3 c. chopped walnuts If you want crunchy topping: Mix 1/3 c. chopped nuts and 2 Tbsp. granulated sugar. Sprinkle on batter before baking If you want a glaze after baking, while still warm: 2/3 c. icing sugar(powdered sugar/10X sugar), 1 Tbsp. grated lemon rind, 3 tsp. lemon juice Large bowl--combine flours, oats, brown sugar, baking powder, soda and cinnamon. Medium bowl—combine buttermilk, molasses, oil and egg. Make a well in the center of the dry ingredients and add the buttermilk mixture all at once. Stir just until the dry ingredients are moistened. Sprinkle the blueberries, carrot, walnuts and raisins over the muffin batter. Gently fold in the ingredients until evenly mixed. Spoon mixture into prepared muffin tins. Sprinkle crunchy topping on batter (if desired) Bake 18-20 minutes until lightly browned and toothpick inserted in the center comes out clean.
