GFCF pudding from almond milk?

Does anyone know if I can make GFCF vanilla or chocolate pudding from almond milk? My daughter drinks almond milk and I would like to see if I can make pudding using the almond milk. Has anyone made this or knows of a recipe? Would love instructions.
