I started having severe skin rashes over 10 yrs. ago. After 4 doctors, 2-3 different diagnoses, skin tests, blood tests for allergies, injections for over a year and on and on and on, I discovered that if I ate food that contained yeast (like bread), I got a rash. If I didn't eat breads, I didn't get a rash. My latest doctor wants me to believe I have a gluten allergy. I told him that I can eat cornbread, muffins, biscuits and cakes without a rash. He still thinks I have a gluten allergy. So --- I start with a whole-grain flour mixture: Flax seeds I grind in my coffee grinder, other grains I grind in my Vita-Mix or buy as flour. Remember that ground whole grains and flours must be kept in the refrigerator or freezer. I put 1 cup of each item into a zipper gallon plastic food bag. (This lasts me for 1 to 2 months in the refrigerator.) Flax seed-ground, garbanzo flour, kamut flour, millet flour, oat bran, oat flour, rice bran, rice flour, soy flour, spelt flour, wheat bran, wheat flour, wheat germ. I use 6 to 8 of these, but always use the whole-wheat flour and oat flour in each batch. Seal the plastic bag and turn it around and around until everything is mixed. (For recipes that call for all-purpose flour, I do 1/2 of the above mixture, 1/2 all-purpose flour). If the recipe call for 2 cups all-purpose flour, I would use 1 cup of Lucy's whole-grain flour mix , 1 cup all-purpose flour. You may want to use a " pinch " more baking powder or baking soda. If your mixture contains flax seed, you can use a little less oil, shortening or butter (flax seed contains oil). I also substitute applesauce for some of the oil in a recipe. When egg yolks were thought to be bad I used egg whites (if a recipe calls for 2 eggs, I would use 4 egg whites).
