When I work late on Thursday nights I often have a baked potato with ff sour cream, a little bit of light cheese and maybe some mushroom or broccoli. It is a great, light dinner. So much better than a frozen meal too!! Sweet potatoes are super loaded with vitamins too!! Re: potatoes are not the enemy Noel told me for my carbs to have oatmeal and potatoes (baked) so I've been using fat free cheese and fat free sour cream on them with salsa and green onions.
