Coconut milk is derived from the meat of the mature coconut (it has more

oils in it) - coconut water is the liquid you find in the young, green

coconut - Ultimately that juice turns into the meat that you find in the

older (brown hairy) coconuts. We used to have lots of coconut water when I

lived in India.

The water that is within a young or mature coconut is not at all fattening.

Cocoanut milk is obtained by squeezing the coconut flesh and is completely

different (and delicious too!)

Asian markets usually carry young Thai coconuts as do certain shop rites.

You should probably google a photo of a " young Thai coconut " so you know what

they look like. Very different in appearance to a mature coconut-which,

incidentally, one may obtain coconut water from by making three holes at the end

with the indentations. It does not taste the same as the young coconut water.

The bonus of getting a young coconut is that the sweet, tender flesh is a

fantastic, low cal treat.

We like to take the flesh and water plus frozen pineapple and blend in the

vitamix. It makes a sensational natural " ice cream' a piña colada if you will.

I don't drink alcohol, so I really like this healthy, booze-free recipe.

Mel,

When you crack open the coconut, you get coconut water. Milk comes from

processing the meat.

Melody, I think more and more markets are beginning to carry the young Thai

coconuts. I just got one yesterday at our local Henry's Market (they're probably

not a national chain, but they are a health food store). Ask the manager of your

place if they can get them. Usually found in the refrigerated section. They are

a beige color and are cut to come to a point on top, kind of like an upside-down

cone. These are the premier coconuts for the water, and the flesh is soft and

yummy - you can get it out with a spoon. Very different from any coconut you've

ever had before. And the water is loaded with electrolytes!

And you might want to look at a YouTube video on how to crack the young

coconuts, too. There's an art to it, and you don't want to cut off your arm

doing it the wrong way!

coconuts, I'll pick one up. Just to get the experience.

Ah - then I would get a picture of a young Thai coconut from the Web, print it

out and take it with me. How about that?

I would LOVE to ask the manager anything but the manager does not speak one word

of English. I point to something, he says something in chinese, I smile, and I

either buy it or I don't buy it. That's the way it is with MOST of the asian

markets.

But I absolutely love their greens so I don't care what I'm eating, I'm EATING

THEM!!!!

My friend refuses to go into these markets because no one can talk to her.

This makes her mad.

I just said " Why not learn to say " how much, or what is this?? " in their

language.

Seems simple enough to me.

I can do this in many languages.

That's how I learn.
