World's healthiest meal

Swedish obesity expert Stefan Rossner was in town for the International Obesity Congress. He has discovered one of the world's healthiest meals and made it for the Sunrise team. Ingredients300g of any white fish (cut into cubes) Half a cup of white wine Splash of olive oilOne whole lemon One whole lime One punnet of cherry tomatoesLeaves of spinach, fennel or bok choy MethodPlace spinach leaves in the bottom of a microwave dish. Splash some olive oil and the wine over the top. Place cut fish on top of the spinach and cook in the microwave on high for approximately 3 minutes. Once it is cooked through add the cherry tomatoes and squeeze some lemon and lime juice over the top. Salt and Pepper to taste.

I think that even I might be able to manage that meal!

Hope you are, and all other bandits, are enjoying their public holiday. Does anyone know what this public holiday is for (not that i'm complaining........lol)?!
