But I also wanted to say, when I buy bananas that color, they are ripe overnight without any special help. Some people like them riper (yellow with brown spots) when the starch has turned more to sugar. Some people prefer them starchier. Some people like them in between. How does Alan like his? THAT'S when you should take them out of the sack. Do remember, every time you open the sack, you let out the gas that is ripening them. LOL, I'm so picky about my bananas being just the right color I only buy a few and go back to the store often. I feel like an Amish housewife, I'm ripening up bananas and tomatoes, I'm putting potatoes in bowls, I have onions in other bowls. I make Vitamix ice cream. What else am I going to be learning at my age (64)?? This is beyond cool. Last night I gave a small talk on Diabetic Neuropathy in NYC at a support group for people with Neuropathy. They all know I sprout, they all know I take Methyl B-12. They all know I eat organic (and healthrully)as much as possible. But they all ate Pizza!!! And cookies, and brownies. lol How fun! My wife and I split a banana every morning for the potassium and other nutrition. I've never understood how people can eat them that way. They're hard and unpleasant. Part of the joy of eating fruit is the beautiful fruity aroma that you get when the fruit is ripe (again, IMO, when it has an aroma!) As we all know, a large part of taste is smell. So I don't think you're missing anything good by not eating a green/ish banana. With all due respect to Simone.
